Roasted chicken with mustard

Ingredients
- 1/4 cup Dijon mustard
- 1 tbsp unsalted butter softened
- 1.5 tbsp whole grain mustard
- 1 tsp dried thyme
- 3 lbs boneless skinless chicken thighs
- 1.5 cups panko bread crumbs
- olive oil optional
Instructions
- Preheat oven to 400°F. Line baking sheet with foil.
- Mix together all ingredients in a large bowl except chicken, panko and olive oil.
- Toss chicken in bowl to coat well. Roll coated chicken in panko crumbs and arrange on foil covered, well greased sheet tray. Spray or drizzle lightly with olive oil, if desired.
- Bake for 30 minutes or until internal temperature exceeds 165°F.
